This is an ingredient used in early cocktails and punches as a way to add an elegant citrus quality to them. Very easy to make and well worth it
zest a few lemons
Using a muddler, press the lemon peels and sugar until the peels begin to express their oils. Cover and let sit for at least a half hour.
After an hour, you’ll have a bunch of lemon peels in the bowl or mixing glass but a nice amount of lemon oil also, pooled up in the bottom of the container
